Jack-fruit is one of my favorite fruit. Being from Malnad region, our summer holidays would never go with out enjoying the delicious items prepared from Jack-fruit or raw jack-fruit. One of such memories is having the raw jack-fruit papad which my grandmother used to prepare.
One of the traditional recipe which is usually made in our houses is Raw Jack-fruit curry/ sambar, which my all time favorite.
1 raw Jack-fruit.
3 medium size tomatoes.
1 cup soaked black channa dal.
Sambar Masala Ingredients :
1 tbsp Coriander seeds(Dhaniya)
1/2 tbsp Fenukgreek Seeds (Menthya)
1/2 tsp Cummin Seeds (Jeerge)
1 tbsp Channa dal (Kadle bele)
1/2 tbsp Urad dal (uddina bele)
1 hand full red chillies.
Step by Step Process :
Step 1 : In Pressure Cooker add chopped jackfruit, channa dal, tomatoes along with 1tsp oil & turmeric and cook for 3 whistles. Let the pressure reduce naturally.
Step 2 : In a vessel add oil, mustard seeds & hing for tempering and add the cooked jackfruit & black channa dal with salt and allow it to boil. Keep the tomatoes aside.
Step 3 : Now in a seprtae pan fry all the ingredients mentioned above in Sambar masala Ingredients list with 1tsp oil untill aromatic. And grind the mixture along with grated coconut, tamarind, and 1 cooked tomato. Also smash the other 2 cooked tomato and keep aside.
Step 4 : Add the masala & smashed tomato to the boiling jackfruit – channa dal mixture. Allow it to boil fr 7 to 8 mins. Serve along with hot rice.
